2-3 Southern Valley Summer Squash
1 Tbsp. butter or olive oil1/2 Vidalia onion (or sweet yellow onion)
Salt and pepper to taste
Slice squash 1/4" thin using a knife or mandolin. Slice onion half into thin slivers using knife or mandolin.
Over med-hi heat, melt butter or heat olive oil. Plase the squash and onions in a skillet and and saute 8-10 minutes or until the squash starts browning.
Add salt and pepper to taste.
